Spring is finally here at the Dancing Deer Baking Company! We can actually hear the birds chirp in front of the factory when we arrive in the morning. YEAH!
The flowers have bloomed and we are so thrilled that so many of you have decided to give our Rose Bouquet to those special women in your life. It is such a fun and different gift.. Have you seen the hand decorated butterflies? They are beautifully paired with hand decorated multi colored daisies, another delicious way to celebrate mom! Our Deer’s suggest serving a pot of tea, your favorite flavor of course, and sit down with Mom and share conversation and cookies… After all sharing cookies is love!
We have been busy in the test kitchen at Dancing Deer. With new staff additions and new products being made daily we are really mixing up some fun here! The smells of the chocolate and spices, coffees, and caramels.. are all so YUMMY!
Baking is an art in any form. There is something about seeing the butter and sugars cream together with the pure power of the mixing paddle. Then seeing it transform and become light and fluffy after the farm fresh eggs are poured in on top. The smooth creation is coming alive right before our bakers eyes… the flours are added and lots of chocolate or nuts or fruit… All so yummy! The finished product sits in the bowl looking as perfect as it should waiting to be born.
Baking in the oven is an amazing process. Once the cookie enters the 350 degree oven the smooth creamy butter starts to melt… Spreading the cookie base wider than when it once sat. Then the edges start to form a nice puffy appearance while the leavener starts to kick in to balance the cookie. (Can you tell I love baking?) The aroma starts to creep from under the door and fill the air with the smell of caramel and butter… Nothing is quite like it… When they are ready done they just need to check them… Puffy but perfect… they settle on the pan and are so soft and delish! We pack them up as soon as they are cold and ship them out to YOU!

When you are measuring Corn syrup, honeys, or molasses, spray your cup measure with pan spray. The liquid sugar will slide out without losing any inside the measure!

When he was offered the gift, he politely and generously declined and requested to donate his Dancing Deer gift to the Pine Street Inn homeless shelter.
With a deep and long running tradition of helping those in need, we were all too eager to oblige. We took not only his treats, but a few more as well, and hand delivered the sweets to the needy men and women at the homeless shelter.
